UBG Seminar: Beer Quality and Malt with Mike Heinrich of Country Malt

In this presentation we will be focusing on off flavors in beer, their correlation to malt processing, and how a brewery can mitigate them. We will also cover characteristics in malt that can affect the shelf stability of a beer, and how a brewery can maximize their beer shelf stability. Within the off flavors category, we will cover FAN and its correlation to esters and fusel oils, the reduction of dimethyl sulphide (DMS), and grainy/husk off notes. Breaking into shelf stability we will talk about deoxynivalenol (DON) and its link to gushing, and finally oxidative precursors derived from crystal malts.
